De Danske Slagteriers folder om danske udskæringerIt can be very difficult to explain to a non-danish butcher how a danish cut is made to ensure the absolute perfect traditional dishes such as roast pork with crackling. This has was a big problem when we were living abroad, and it has been one of our most frequently asked questions.

Thanks to The Danish Pork Industry we are now able to help. The standard pork cuts are described in english on page 3 and 4 in this PDF file. There are also many great articles and descriptions of danish pork on The Danish Pork Industry's web site.
